Honey Mustard Baked Beans - Jill Moncilovich, BVBA
==================================================================================
2 cups dried navy beans 9 cup crockery baked bean pot
4 cups warm water
½ cup honey
1 teasp salt
1 ½ teasp dry mustard
heavy dash of onion powder
dash of freshly ground pepper
6 slices of bacon
1 ½ Tblsp butter.
Wash and sort the beans in warm water. Place beans in large saucepan and bring to ALMOST a boil then reduce heat to simmer. Cook in this covered sauce pan for 1 hour. Do NOT let the beans boil as they will crack and get mushy. Drain the beans and save the water. Alternate: soak beans overnight in hot water.
Mix the bean water, honey, salt, dry mustard, onion powder and dash of freshly ground pepper together. Put the bacon on the bottom of the crockery bean pot and add the beans. Pour in the liquid and top with the lump of butter. Cover the bean pot and bake in a slow oven (250 to 300 degrees F – I use 275 degrees F) for 5 hours for overnight soak or 6 hours for the 1 hour pre-cook.. During the last hour of baking, uncover the pot. Add a little water if the beans become too dry.NEWSLETTERS
